Ingredients
- 1 lb. boneless, skinless chicken breast, cut into thin strips
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil
- 1 cup chopped onion
- 1 green bell pepper, chopped
- 2 cups shredded cheddar cheese
- 1 (14 oz) can diced tomatoes with green chiles, undrained
- 1 tablespoon tomato paste
- 3 tablespoons milk
- 3 tablespoons butter
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a shallow dish, combine flour and salt; season chicken with the flour mixture. In a large skillet over medium heat, heat oil.
- Cook chicken strips in batches until golden brown on both sides. Transfer to a baking dish. In the same skillet, onion and bell pepper cook until tender.
