  • 1 ½ pound chicken breasts
  • 1 medium chopped onion
  • 4 tbsp butter
  • 3 cloves garlic
  • 4 cup chicken broth
  • 3 cup firmer rice
  • 1 ½ tbsp lemon juice
  • 1 ½ cups white rice rinsed
  • 1 cup cheese
  • 1 ½ tbsp salt
  • ¼ tbsp black pepper


  • Sauté the onion and garlic in butter until soft. Sauté for 34 minutes on low heat, or 10 more seconds if you're using an Instant Pot with sauté function.
  • You're going to want some extra hot sauce for this one. Add the chicken and scrape up any bits on the bottom before adding in rice, broth, lemon juice it’ll keep you warm all winter long. Bring them both near boiling point then give everything a good stir until cooked through, 510 minutes usually does it.
  • When your Instant Pot is done cooking, remove the lid and set it to Sealing. Then just wait 8 minutes until all of that deliciousness has been collected under a sturdy cover.
  • When you're ready to eat, remove the pressure cooker from heat and let it naturally release for 2 minutes. Quickly lift off any excess steam before moving on to step three: stirring in preparation for seasoning with salt and pepper. If desired, add another tablespoon or so of chicken broth until your soup reaches the consistency that suits YOU best; some people prefer a less thick texture while others like lots more broth added during cooking time because they know their preference will change depending on what's on their plate and in their company.
