1. Pour the first can of diced tomatoes into the crockpot. Add the chicken, onion, garlic cloves, bouillon cube, thyme, and salt and pepper. Stir everything together. 2. Pour in the water and stir everything together again. Set the crockpot to low and let it cook for 6 hours. 3. About 30 minutes before the soup is done cooking, add the noodles and frozen vegetables to the crockpot. Let them cook until tender according to package instructions. 4. Just before serving, ladle the soup into bowls and top with a dollop of cream of chicken soup concentrate if desired.
