Gajar ka halwa is a classic Indian dessert made with grated carrots, milk, sugar and ghee. It is popularly served during festivals like Holi and Diwali as well as on special occasions like weddings. The addition of khoya (milk solids) to the traditional recipe makes it even richer and more decadent.
Add chopped carrots in a saucepan with sugar. Cook until carrot begin release the moisture. if you want to add milk you can add this point. When gajar turn to soft and tender.
Add khoya, sugar, cardamom pods. Cook 3 to 4 mint.
Now add ghee or oil and cook gajar 10 mint.
Add saffron and cook for another minute.
Serve hot with milk or cream as desired.
