of water or broth
Salt (optional)

sliced mushrooms

of garlic, minced

Salt and pepper to taste
Fresh parsley or chives, chopped (optional, for garnish)
Instructions
Rinse the groats in a fine-mesh strainer to remove any dirt or debris.
In a medium pot, bring the water or broth and a pinch of salt (if using) to a boil.
Stir in the groats, reduce the heat to low, and cover the pot.
Simmer for about 15-20 minutes, or until the groats are tender and the liquid has been absorbed.
Remove from heat and let sit for a few minutes.
While the groats are cooking, heat the olive oil and butter in a pan over medium-high heat.
Add the mushrooms and garlic to the pan, and sauté until the mushrooms are tender and browned, about 5-7 minutes.
Season with salt and pepper to taste.
Fluff the cooked groats with a fork, and transfer them to a serving dish.
Top with the mushroom mixture, and garnish with fresh parsley or chives, if desired.
