Vegetarian Chili Recipe
Ingredients
- 2 tbsp chili powder
- 1 tbsp olive oil
- 2 celery
- 2 bell peppers
- 1 onion
- 1 tsp cumin
- 3 cloves garlic
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp salt or according to your taste
- 425 g pinto beans drained and rinsed
- 1 bottle Mexican beer
- 1 large sweet potato
- 793 g diced fire roasted tomatoes
- 425 g cup of black beans
- 1 avocado
- 2 c vegetable broth
- Lime wedges
- thinly sliced scallions
Instructions
- In a large pot, heat olive oil with medium stove heat. When oil is heated then add celery and peppers and also onions cook till they soft. Now add rest of the ingredient like paprika garlic, chili powder, cumin, Oregano and saute for about 3 minutes or until fragrant.
- Add pepper & salt.
- Add some beer and cook for about 8 minutes.
- Added sweet potato, black beans, tomatoes and pinto beans.
- After adding salt and green pepper to the soup, you brought everything to a boil. Stirring occasionally until the sweet potatoes were cooked through, about 35 minutes.
